The ingredients needed to make Chicken Kabsa:
- Get 1 kg Chicken bone in cut
- Prepare 2 Onion medium sliced
- Take 1 tbsp salt
- Get 3-4 garlic mince
- Get 100 gm Tomato puree or paste
- Take 1 tbsp Ginger grated
- Prepare 5-6 tbsp Oil
- Get Basmati rice 2 cups soaked for 30 mins
- Prepare Saffron strands soaked in 1 tbsp of milk
- Get 4 cups Chicken stock
- Get 1/2 tsp nutmeg (Baharat or kabsa spices)
- Take 3-4 cardamoms
- Take 3 sticks cinnamon
- Take 1 dried lemon
- Prepare 1 tbsp paprika
- Get 1 tsp blackpepper powder
- Prepare 1 tbsp All spice powder
- Make ready 1/2 cup Almonds and raisins
- Get 1 cup grated carrots
Instructions to make Chicken Kabsa:
- Heat butter in a non stick pot. Add in the onions and the garlic. Saute them until just light pink.
- Add the chicken. Saute it well on medium flame turning it every now and then. After 10 mins, add the tomato puree and all the spices one by one.
- Add in the chicken stock and if you are short of it, then add 2 cubes of chicken seasoning (maggi) cubes to four cups of water.
- Cover and simmer until 20 mins on medium flame.
- Remove the chicken from the pot and add in the rice. Cover and cook until done. Do not stir it much. After it is done, give it a light stir.
- Preheat the oven to 200° and broil these chicken pieces for just about 10 mins. Do not over do it. If you wish you can even pan fry them in little butter.
- Garnish with grated carrots, raisins and nuts. Serve hot with a special sauce called shattah or even our very own raita.
