Steps to make Mitai/Sweet Diamonds:
- Sieve flour then add yeast directly into it then baking powder, Salt, egg and cardamom.
- Start kneading with the coconut milk adding little at a time until you have a good soft (but firm, not sticky) dough
- Knead for about 15 good minutes. Pounding as much as possible.
- To check that it has been kneaded enough roll it into a ball and using a sharp knife,make a deep slit through it.
- It should look a slightly bubbly on the inside.
- Set it aside and let it ride to double. Divide into 3balls then roll each ball out in to circle about 1/4 inch thickness.
- Cut into strips then divide each strip into small diamonds
- Place them in a floured surface whilst while you continue doing the same to the rest of the dough.
- Once you have cut them all deep fry them in hot oil till golden brown on both sides and set aside.
- For sugar Coating: Boil sugar, water and cardamon powder till syrup becomes slightly thick. (two threads consistency)
- Add the fried Mitai to this thick syrup and turn the heat down to low.
- The holding the pan on both sides start tossing the Mitai inside the pan so that the Mitai can be coated by the sugar syrup properly and evenly.
- Then place in another plate. Enjoy with tea.
