The ingredients needed to make 'Somen' & Pork Stir-Fry:
- Make ready 90 g x 4 'Somen' Noodles
- Take 1 tablespoon Sesame Oil
- Take 200-300 g Pork *thinly Sliced
- Get Salt & White Pepper
- Make ready 1 small piece Ginger * sliced into fine strips
- Prepare 1 Onion
- Take 4 Eggs
- Prepare Canola Oil for cooking
- Get 1/2 cup ‘Mentsuyu’ Noodle Dipping Sauce
- Take *Note: To make the sauce, mix 1/4 cup Dashi Stock (1/4 cup Water & 1/4 teaspoon Dashi Powder), 1 tablespoon Mirin, 1 tablespoon Sake (Rice Wine), 2 tablespoons Soy Sauce
- Prepare Extra Soy Sauce
- Make ready 3-4 Spring Onion *finely chopped
Noodles are served in chilled water and the dipping sauce is also chilled. It is a very simple dish but wonderful. Somen are Japanese dried vermicelli noodles that are usually eaten cold during summer. Japanese summer is so hot and humid that you often loose your appetite by the end of the day.
Instructions to make 'Somen' & Pork Stir-Fry:
- Slice Pork very thinly and season with Salt and White Pepper. Lightly whisk Eggs in a bowl and season with Salt and White Pepper. Slice Onion and Ginger into thin strips.
- Cook ‘Somen’ Noodles as instructed. DO NOT add Salt into the water. Noodles need to be cooked quite firm as you will stir-fry later. After drained, sprinkle Sesame Oil to stop stick together.
- Heat 1 tablespoon Canola Oil in a frying pan and cook Eggs to make firm scrambled egg. Transfer to a plate.
- Add 1 tablespoon of Canola Oil to the hot frying pan and cook Pork. When the Pork changes colour, add Onion and Ginger and cook until soft. Add 'Mentsuyu' Sauce, then combine with cooked ‘Somen’ and the egg.
- Sprinkle extra Soy Sauce over if required, and some chopped Spring Onion and serve.

The "mirin" is a sweet vinegar. The shoyu is just regular soy sauce. Surprisingly enough, these really had the texture of somen noodles!
