- A) For Cupcakes
- Take a bowl and add all the ingredients like all-purpose flour, chocolate powder, cocoa powder, baking soda, baking powder, coconut and mix it well.
- Take another bowl and add oil, coconut milk and mix it well using whisker.
- Now add vinegar and vanilla essence and again whisk it well.
- After that mix both dry and wet ingredients using beater or whisker.
- Beat until better become smooth and fluffy.
- Mixture should be thick in texture.
- Make sure there will be no lumps.
- Keep it aside.
- B) For baking
- Fill the cooker with salt upto 1 or 2 inches and place the plate or any stand on top of it.
- Preheat the cooker for 8-10 minutes on medium flame with the salt.
- Make sure to remove the whistle and rubber ring.
- Take cupcake cup and pour the batter in to it.
- And put the cups in aluminum cupcake moulds.
- Coat the batter with grated coconut.
- Now place the pan inside the pressure cooker.
- Close the cooker, remove the whistle and bake the cup cakes for 20-25 minutes on low flame.
- Check the cupcakes in between 15 to 20 minutes.
- Now Turn off the flame.
- After that remove the cupcakes from cooker and keep aside.
- C) for frosting
- Take a mixing bowl.
- Add butter and creem cheese and beat it well using beater.
- Now add icing sugar and again beat until you get thick consistency.
- Now add vanilla essence and again beat it.
- Now take one icing bag and add the mixture into bag.
- You can add food colour in frosting for different different coloured cup cakes.
- Now decorate the cup cakes with frosting.
- Garnish it with sprinkles.
