  2. Prepare small tin tomatoes

Instructions to make Jollof Rice:
  1. Parboil water once it boiling hot turn off heat and pour the rice into the pot, let it rest for about 2 mins; stir and drain.
  2. Wash tomatoes, pepper, onion and blend proper; you can add garlic and ginger as well
  3. Heat up pot add vegetable oil and stir in blended tomatoes and allow it cook for about 7 minutes before adding the tin tomatoes, stir continuously for another 10minutes once the it looses the sour taste,
  4. Add salt, bouillon cube, and finally stir in the rice, add a little water or chicken stock if you have any, you will have to monitor it to keep adding water till the rice is tender.
  5. Once the rice is tender, and water has dried out; add sweet corn and green peas stir then turn off heat and serve
