- In a glass bowl, add the candied fruits, the chopped dates, and the rum/brandy. Mix and set it aside.
- In a piece of muslin cloth, tie up the cloves, cinnamon and garlic.
- In a large saucepan, drop in the tied-up muslin, both the sugars, the butter, salt, water, and raisins. Bring to a boil, while stirring constantly.
- Now, reduce the flame and simmer this mixture for 5 mins. Keep stirring to ensure that all the sugar has dissolved.
- Once done, turn off the heat and let the mixture cool for 10 mins.
- After 10 mins, pre-treat your oven at 160 degree Celsius. Line a 7"by 7" square baking dish with parchment paper/foil.
- Remove the muslin cloth from the saucepan.
- In a small bowl, whisk together the egg and the vanilla. Now, gently add this mixture into the lukewarm saucepan. Mix immediately to prevent scrambling of the egg.
- Also add in the flour, baking powder, candied fruits, dates and almonds. Mix well.
