  1. Make ready 50 spring rolls wrappers
  2. Take 3 cups cabbage(shredded)
  3. Take 2 medium carrots (shredded)
  4. Make ready 1 cup fresh bean sprouts
  5. Take 8 dried wood ear mushrooms (soaked with hot water for 15 minutes and then cut it small)
  6. Take 1 spring onion(cut small)
  7. Get 2 cloves garlic(grated)
  8. Prepare 2 tsp grated ginger
  9. Prepare 1 tbsp soy sauce
  10. Get 1 tsp sesame oil
  11. Prepare 1 tbsp olive oil
  12. Make ready 1 tbsp wheat flour
  13. Prepare to taste Salt and pepper
  14. Get Cooking oil for deep frying
Steps to make Vegetable spring rolls:
  1. In a large wok,heat 1 tbsp olive oil,add garlic and ginger,stirring frequently until fragrant then add mushrooms,cabbage,carrots and spring onion. Stir-fry about 2 minutes and then add bean sprouts,soy sauce,sesame oil. Salt and pepper to taste. Let to cool down.
  2. In a small bowl,whisk together the wheat flour with a bit of water.
  3. Place a spring roll wrapper on a flat surface,add 1 tbsp of the vegetable mixture into a corner of the wrapper and then roll the edge of the wrapper tightly around the mixture,fold the two side corners toward the middle of the wrapper while continuing to roll up.paint the top edge with the wheat flour mixture and wrap tightly.
  4. In a larga wok add the frying oil over medium heat. Fry the spring rolls until golden brown. Spring rolls ready to serve
