- In a bowl, combine 1/4 cup olive oil, rosemary, garlic salt, parmesan (if using) and parsley, put aside to infuse flavours while waiting for potatoes
- Drain potatoes and shake about in colander to rough up a bit. Place into a bowl, pour over mixture and gently toss or stir to ensure full coverage
- Add oil to roasting pan, place in preheated oven at 200°C till oil is hot
- Add potatoes to hot oil carefully and place roasting pan back into oven, reduce temperature to 180°C.
- Roast potatoes for 25 minutes, turn potatoes over and sprinkle with sea salt, put back in oven for a further 25 minutes, till golden brown.
