- Get 1/2 celeriac
- Make ready Olive oil

- If your celeriac has a wordy core, remove that. Then chop your veg into large chips.
- Boil in salted water for about 10-15 mins until nearly cooked though but still reasonably firm in texture. Drain and allow them to steam dry in a sieve above the hot pan.
- Heat a baking tray in the oven at 200 C. Add a good few glugs of olive oil, then add your chips. Season with pepper and roast until crispy, turning one or twice during cooking. Mine took a good 45 minutes.
- Season with salt and serve immediately.
