- Heat oil, add asafoitida, add cumin seeds and mustard seeds and curry leaves. Add onion, garlic and ginger. After roasting for a few min, add all vegetables and roast for a few min.

- Add quinoa to the vegetable mix and give it a good stir.
- Mix well with the spices and cook for a few min.
- Add water, curd and cook in a cooker for two whistles.
- Add chopped coriander and serve hot with green chutney.
