Steps to make Spicy Potato Eggplant or Baingan Aloo Masala:
- Take a pan, add oil, heat it.
- Fry the veggies till light brown. Keep aside.
- Add more oil into the same pan, heat it.
- Add kalonji, methi & saunf, let it splutter.
- Moderate the heat, add ginger garlic paste, add lil water also, sauté it for a while.
- Increase the flame, add onion paste, also add lil water, stir fry it for a while.
- Lower the flame now, cover it with the lid, cook it until brown.
- Open the lid, add haldi, red chilli powder & dhania powder, again add lil water, stir fry it for a while. Increase the flame now.
- Add tomato purée & salt, give a stir. Lower the flame now.
- Cook it covered till oil has oozed out.
- Open the lid, add garam masala powder, stir it for a minute.
- Add fried veggies, give a stir, increase the flame.
- Add water accordingly so as to get a saucy consistency.
- Give a boil. Lower the flame, cover it again, cook it till done.
- Switch off the flame, open the lid after a while.
- Take out in a serving bowl, garnish it with chopped dhania patta.
- Have it with Roti or Paratha.
