Instructions to make Potato Crusted Quiche:
- Heat oven to 200°C. Grease your baking dish/tin with butter.
- Peel & thinly slice your potatoes, wash & set aside in a strainer to drain all the water… (or you can pat dry). Salt your sliced potatoes & add a dash of spices of your choices & mix them carefully + thoroughly. I used turmeric.
- Arrange your potato slices on the baking tin/dish in an over lapping manne & the sides as well. Cover up any spaces with more slices of the potatoes. Cover the potatoes with some cheese (just enough to cover the bottom; ¼cup). Put it in the oven & bake at 200°C for 20minutes or until the potato slices have become soft.
- In a bowl, add your egg, chopped tomato, milk, chopped ball peppers, salt, meat & spices of choice; I used paprika, garlic powder, mixed spices & turmeric. You can play around with your filling & alternate as per your preferences. Whisk them all together.
- Add in your cheese (½cup), & mix again.
- Take your tin of baked potato slices & pour the egg mixture slowly. Thereafter, sprinkle the remaining cheese on the mixture & bake for 180°C for 35-40 minutes or till the mixture is well baked & dry.
- Slice your Potato Crusted Quiche & serve while hot/warm.
