  3. When cooled. Add the vegetables and water to a blender and puree.
  4. After, strain the mixture back into the pot. (Rinse the pot if necessary.)
  5. Turn on the heat to medium high. Boil the puree stirring frequently until all the water evaporates. Lower the heat.
  6. Next, add in the sugar and stir again.
  7. Cook until the sugar dissolves.
  8. To continue, add in the tomato paste, vinegar and salt. Stir again and cook for about a minute.
  9. Finally, add in the oil and seasonings and stir again. Continue cooking for a few minutes until everything is well combined, thick and all the water has evaporated.
  10. Take it off the heat and let cool. After it cools, thin it out with water as desired.
