- Prep your ingredients. You will also need a sharp knife, chopping board, saucepan and a wooden spoon
- Finely chop the onions.
- Add butter and the onions to the saucepan on a gentle heat. Cook for 10mins until onions are softened.
- Slice the mushrooms and add to the cooked onions with thyme. Cook for 5 mins until the mushrooms are softened.
- Add the risotto rice and stir. Gradually add 1/4 of the stock at a time, stirring occasionally. And topping up with more stock as it absorbs.
- When most of the stock has absorbed and the rice is nearly cooked, add the chicken and stir to warm through.
- Season well, adding the parsley & Parmesan.
