The ingredients needed to make Kalagai curry:
- Get The order of veggies is as follows
- Get 10 Gherkins
- Get 100 gm Suran
- Take 10 cluster beans
- Prepare 100 gm Ridge gourd
- Take As needed gourd bottle
- Get As needed pointed gourd
- Take As needed spinach chopped one medium size bowl
- Prepare 80 gm Tamarind
- Take 150 gm coriander
- Get 6 red chillies
- Prepare 1/2 cup Moong dal
- Prepare 2 tbsp salt
- Take 4 cloves
- Take 1/2 cup jeera / cumin
- Prepare 2 garlic cloves
- Get 1/2 teaspoon turmeric powder
- Prepare 100 ml cooking oil
- Take 2 tbsp poppy seeds
- Make ready 1 tbsp fenugreek seeds

Steps to make Kalagai curry:
- First wash the veggies with water and chop the chosen vegetables in to medium size pieces unlike for regular curry ie not too small nor too big.keep them aside.
- Soak the tamarind in a bowl for 15 minutes
- Now, take a frying pan place it on the stove and prepare masala powder for the dish. they must be fried on high to medium simmer. Now coriander, redchillies, cloves, moong dal, garlic cloves, jeera all these ingredients must be fried well until a good smell is observed,you can turn on low simmer in between but finally it must be fried well. switch off the stove and let it cool for 10 minutes. After 10 to 15 minutes they must be grinded to fine powder
- Now take a vessel ie cooking pan.Place the cooking oil and let it get heated,after oil got heated put the poppy seeds, fenugreek seeds and medium size chopped veggies in to cooking pan and fry them to loose rawness. close the lid for 10 seconds
- Open the lid and then put the finely grinded in to powder ingredient into it and mix well.
- Add the tamarind water in to it and mix again. put salt to it as well. This content should be cooked by adding less amount of water in steps. It would take nearly 20 min to cook the veggies properly.
- Finally,this dish is ready to serve with rotis,vada or can be taken to taste individually.
