Instructions to make Mix Veg Khichdi:
- Take a mixing bowl,add rice & dal, mix it well, wash it, soak in water for 1/2 hr, strain it, keep aside.
- Fry all the veggies in oil, keep aside.
- Take a pressure cooker, add ghee, heat it, moderate the heat, add tejpatta & dalchini, saute it for a while.
- Now add hing & zeera, let it splutter.
- Add green chillies & ginger, saute it for a while.
- Now add tomato, stir fry it for a while. Do not over cook it.
- Add red chilli powder, give a stir.
- Add all the veggies, stir fry it for a while.
- Now add khichdi into the masala, stir fry it for a while.
- Add garam masala powder, salt & sugar, mix it well, increase the flame.
- Stir fry khichdi till grains aur separated.
- Add water accordingly so that khichdi does not become mushy.
- Place the lid, give 2 whistles.lower the flame, cook it for 8-10 min.
- Switch off the flame, allow it to depressurize. Open the lid after a while.
- Take out in a serving bowl, keep aside. Take a tadka pan, add ghee, heat it.
- Add laung & dry red chilli, cook it till brown, add in the cooked khichdi, do not mix it.
- You can add chopped dhania patta (optional)
- Have it with Raita, Salad, Papad or Chutney.
