The ingredients needed to make Mee Siam:
- Prepare 300 g rice vermicelli (meehoon) - soak in water for 5 minutes and drain
- Prepare 300 g prawns - peel and devein
- Take 1 cup beansprouts (peel both ends to get a crunchier bite texture)
- Prepare 1 cup chives, cut into 3cm length
- Get 1/4 cup dried shrimps, wash and chopped coarsely
- Prepare 2 pcs firm tofu, slices (optional - I am not a big fan of tofu)
- Make ready 4 kaffir lime leaves, shredded finely
- Make ready 1/3 cup cooking oil
- Prepare Calamsansi cut in halves to serve at the side (optional)
- Prepare Ingredients to be pounded or blended together:
- Take 4 cloves garlic
- Make ready 4 shallots
- Make ready 1 1/2 tsp turmeric powder
- Take 3 Tbsp chopped ginger flower (Bunga Kantan)
- Take 1 stalk lemongrass chopped finely
- Make ready 3 bird eye chilies (if you like it spicy)
- Get Seasonsings:
- Make ready 2 Tbsp fish sauce
- Get 1 Tbsp soy sauce
- Prepare 1/2 Tbsp tamarind paste
- Make ready 2 tsp sugar
- Get 1 tsp chicken stock granules
- Take 1/2 tsp white pepper
- Take 2 cups water
It is garnished with shredded omelette, scallions and lime wedges which make every mouthful a delight to savour. Mee Siam is a little tedious to prepare but the end result is totally worth it as it is delicious, spicy and packed with flavour. It is also perfect for parties or pot luck and you can easily cook a big pot of these. You can also make a vegetarian Mee Siam just by leaving out the prawns.
Instructions to make Mee Siam:
- Prepare all the ingredients!
- Heat oil in the wok. Lightly fry the dried shrimps and tofu but separately. Dish out and put aside.
- Stir fry the pounded ingredients and kaffir lime leaves until aromatic. Add prawns and fry until they are half-cooked. Dish out only the prawns and put aside.
- Add in seasonings and bring to boil. Then add meehoon and stir-fry.
- Mix in dried shrimps, tofu, prawns, chives and beansprouts. Mix them well for 3 minutes or until everything are cooked.
- Serve with cut lime at the side to drizzle if preferred.
It is also perfect for parties or pot luck and you can easily cook a big pot of these. You can also make a vegetarian Mee Siam just by leaving out the prawns. It would still be delicious as the main attraction of. This Mee Siam is based on the Malaysian version - which is a hot and spicy dry noodle dish. There's also a Singapore version that's similar, but is served with a spicy gravy.
