- When the meat is tender with little stock remaining in the pot, add the pepper, iru crayfish mix, allow to boil for like 3mins checking the water to avoid burning.
- Add the chopped water leaves, and pour the red oil in immediately and give a stir.. Allow to boil for 10-15mins
- Taste for salt at this point and adjust your ingredients if need be.
- Pour in the pumpkin leaves and stir properly. Bring to a boil for 10min(make sure you don't over cook it to retain that greenish color).
- Your yummy vegetable soup is ready. You can match it with any swallow of your choice or white rice..
