Then saute ginger garlic chilli paste, then add chopped tomato saute well, now add chilli, turmeric, coriander powder, kashmiri red chilli powder mix it well together, saute the tomatoes till the oil starts separating from the mixture. You have to keep on stirring often when sauteing tomatoes. The tomatoes have to become softened, pulpy and you should see oil releasing from the sides.
  3. Stir and mix the chopped baingan very well with the tomato masala mixture.now add boiled green peas mix it well,,Stir and saute baingan peas bhurji stirring often for some 4 to 5 minutes more.
  4. Baingan Mutter bhurji is ready. Finally garnish with chopped coriander leaves. Serve with chapatis.
