- Add onion, tomatoes, capsicum, corn kernels mix well fr 1 min
- Add boiled rice & give it a good mix
- Add spring onion greens, mix well & set aside
- In bowl, add eggs, salt & whisk well
- Heat 1tbsp oil in pan over medium heat (make sure the surface of the pan is nicely coated with oil)
- Pour beaten eggs, spread evenly & cook on low flame frm both sides
- Assembling : in a medium sized bowl place omelet & add cooked rice in it & fold all sides
- Place plate over it & turn carefully
- Remove bowl & garnish with tomato ketchup, spring onion greens & serve hot
- U can adjust spice according to ur taste
- U can use short grain rice (i hv used long grain rice)
