Prepare fried rice and a thin omelette separately, then cover the fried rice in the omelette. Omurice is a short form of omelet and rice, the two essential ingredients of this Japanese fusion dish. The rice is usually pan-fried together with chicken and ketchup, then wrapped in a thin omelet sheet. - Add the cubed chicken pieces when the onions are golden brown. Fry the chicken pieces until they become soft. Add some salt.
- Add ginger-garlic paste and fry them. Now add chopped tomatoes and mix them well. Also add all the vegetables and mix them very well.
- Fry the vegetables for some time. Do not fry too much then the crunchiness of the vegetables will be gone. Then add tomato ketchup and mix them very well.
- Now add the cooked rice and mix them very well. The flame should be low so that they won't stick. Give 1 tbsp black pepper and check the salt. Add some fried almond in the rice. Now mix them very well. Lastly add chopped cilantro and switch off the flame. The rice is ready.
- In a small bowl break 2 eggs and salt and pepper and whisk them very well. Now in a spreaded fry pan heat 1 tbsp oil and spread it evenly. Give the egg mixture and spread it evenly. The flame should be high and then it should be medium. The omelette will be done slowly. In the meanwhile take a bowl and fill it evenly with cooked rice.
- Now place a plate on the bowl and flip it over on the plate so that the rice will get a desired shape. Give some fried almond on the rice.
- When the omelette in ready take it off gently and place it on the rice. The omelette should not be broken. It needs to be out perfectly with it's shape. Now simply wrap the rice by omelette and garnish with tomato ketchup on the omelette. Serve it hot.
