- Make ready 1 1/2 cup gluten-free biscuit mix
- Make ready 1/2 cup Yellow cornmeal
- Make ready 1 cup water
- Prepare 6 oz chorizo
- Take 8 oz Tomato sauce
- Take 1/4 tsp salt
- Make ready 1 dash pepper
- Make ready 6 oz shredded Mozzarella
Instructions to make Chorizo Pizza:
- Mix biscuit mix, cornmeal, & water together until soft dough forms. Press into greased pie plate, bringing dough up the sides.
- Preheat oven to 425°F.
- Cook chorizo in skillet until sausage is firm, about 10 minutes. Drain. Return to skillet. Add tomato sauce, salt, & pepper. Heat to boiling. Reduce heat. Simmer uncovered until slightly thickened, 5-7 minutes. Spread in crust.
- Sprinkle with cheese. Bake until crust is golden brown, 15-18 minutes. Let set 5 minutes, then serve.
- Notes: if you use regular biscuit mix, use half the amount of water.
- Note: if you choose you could add onions & Green chilies when you start cooking the meat. You could also top the whole pizza with olives before putting in oven.
