- Preheat the oven to 180 degrees celcius
- Like any cake, we will prepare the dry and wet ingredients separately before incorporating them together
- For the dry cake ingredients, add all the dry ingredients listed expect nuts and carrot in a bowl and whisk well
- Keep aside while we prepare the wet batter
- In a large bowl, add the sugar
- Beat the eggs and add them to the bowl and whisk or beat until the sugar is well dissolved
- Next add the coconut oil and whisk
- Follow it up by adding the nuts and carrots
- Give all the ingredients a good whisk
- Now add the dry ingredients in batches and fold in using a spatula
- Once done, add the batter to a greased cake tin
- Tap a couple of times to level and release any air bubbles trapped in the batter
- Place the cake tin on the center rack of the oven and bake for 35-40 minutes
- Post baking, check by inserting a toothpick, if the cake is done
- Cool the cake completely, before demoulding it
