- Heat up oil in a frying pan but do not allow the oil to smoke. Fry the plantains until lightly brown - Transfer into a sieve or paper towel to drain oil
- Form plantain into a pinwheel. Secure with a tooth pick, then cover the bottom with 2-3 tooth picks in order to prevent the fillings from falling off
- Fill each pinwheel with the fillings. Repeat for all the pinwheels
- Spoon beaten eggs over each pinwheel to keep it together
- Heat up oil in a frying pan, fry the plantain pinwheels for about 2-3mins in batches to avoid over crowding the pan. Transfer into a plate or paper towel.
