- Cover the base of baking tray with salt and toss the whole potatoes in the salt. Bake in the oven for 1 hour
- Leave to cool until they are not too hot to touch. Cut each potato in half and scoop out the soft flesh. Mash with a fork until there are no big lumps.
- Cover your work surface in flour and tip the mashed potato onto it. Flatten into a square and sprinkle flour. Knead it, add flour, knead it and keep going until the dough comes together. It’s best to use as little flour as possible but I think I ended up using 2 cups. At this point put large pan of water on to boil.
- Break off an egg size amount of the dough and roll into a sausage. Use a sharp knife and cut into little pillows. Place on a flour dusted tray. Keep going until you have used all the dough (this is my first time so lots of different sizes!)
- Press the back of a fork into each one- this creates a ridge to catch the sauce 😋
- Carefully place all the gnocchi into the boiling water. Cook for approx 1-2 minutes, until they rise to the top.
- Drain in a colander, rinse in cold water then toss in olive oil to prevent the gnocchi from sticking together.
Sure you can buy it from the store, but homemade gnocchi tastes so much better when you make. This version even has cheddar cheese in the dough making it a step above. Drain and serve with tomato sauce and grated cheese. Note: Before cooking, gnocchi may be flash frozen on a cookie sheet, then place in plastic bag in. Homemade Gnocchi are the perfect substitute for traditional noodles in just about any pasta dish.
