- Take salmolina, gram flour and yogurt in a bowl. And whisk it add about ¾ cup water and whisk it for about 5 minutes. Rest it for 20 minutes. Grease a pan with oil. After 20 minutes add salt and yellow colour and mix it well. Add pouch of eno give a quick mix and quickly transfer to greased bowl. And microwave it for about 4 minutes.
- For water. Heat a pan with 1 tsp oil. Put some mustard seeds, curry leaves and green chilies to it and cook it for about few seconds. Afterward add 2 glass water and add black salt, sugar, and lemon juice to it. Boil it for about 2 minutes. Water is ready.
- After 4 minutes dhokla base ready. Leave it for about 30 minutes for cooling down. After that add this sweet and salty water to it and refrigerate for cooling.
- For sauce. Take a bowl add gram flour and ½ cup water and mix it no any lumps should be there. Add 1 glass of water to it. Add sugar and salt and mix it. Then take a pan take 1 tsp oil with some mustard seeds,curry leaves and green chilies. Cook it for few seconds. Add a mixture of gram flour. Boil it for 2 minutes then add lemon juice to it. Mix it well and your sauce is ready.
- Enjoy the chilled dhokla with sauce.
