- Get I cup brown Rice
- Take For Vegetables you need; Assorted bell peppers, 1/2 a pc each
- Get 2 carrots
- Prepare 1 courgette
- Get 2 onions
- Prepare 1 handful green peas
- Make ready 1 handful french beans
- Get to taste Salt
- Prepare 1 tbsp butter or Margarine
- Get 1 tbsp cooking oil
- Take 1 tbsp grated garlic n ginger
Steps to make Buttered Vegetable brown Rice. #Authormarathon:
- In a sufuria, bring water to boil. Add some very little oil n some grated garlic n ginger. Let them boil.
- Add your brown rice. Note: No salt while boiling as i understand n noticed that brown rice takes too long to boil if you add salt while boiling.
- As boiling is taking place, be working on your vegetables.
- Clean them all and chop them all into cubes n set them aside.
- In a sufuria, bring water to boil n add salt. Blanch your green peas n french beans till tender for 10 mins. Remove them from the heat n pass them through cold running water. By doing this, they become tender n maintain its green colour. Avoid over blanching them.
- In a frying pan, add some little cooking oil n heat abit. Add 1/2 cubed onions n saute them till almost golden brown.
- Add some salt n stir well. Add cubed carrots as u mix well. Add your blanched green peas n french beans as u continue mixing.
- Add the remaining onions and 1 tbsp butter. Give them a good mix.
- Add courgettes n assorted bell peppers. Sautee for only 5 mins. Correct the seasonings then put off the heat. The below is the photo for the sauteed buttered mixed vegetables. You can opt to have them plain as they are.
- By this time your brown rice is already boiled n well cooked.
- Add it to the sauteed mixed vegetables n mix well n gently using a kitchen folk. Cover it for 5 mins or until you are ready for service.
