- Boil the kettle. Cook garlic and chilli in olive oil for a min or two. Slice the pepper and throw it in.
- After a min or two throw in the prawns and saffron. By now your kettle should have boiled, so make the stock in a jug adding a pinch of salt if desired. Cook prawns for about 2 mins
- Now add couscous and immediately the boiling stock. Cover and leave for about 5 mins. Then fluff it up with a fork and serve with lemon wedges and parsley 😀
Season with salt and pepper, to taste. Stir until all the ingredients are combined. Put the couscous and lemon zest in a large bowl; season. Cover with clingfilm and set aside. Add the red pepper, onion, garlic, cumin, salt and pepper.
