- Take 1-2 cup quinoa
- Prepare 4-5 curry leaves
- Get 1/2 tsp Mustard seeds
- Take 1/2 tbsp vegetable oil
- Take As per taste Salt
- Take 1 tsp Ginger chopped
- Prepare 1 green chilli (chopped)
- Prepare 1/2 tsp sugar
- Make ready 1 tsp turmeric powder
- Take 1/2 tsp black Pepper

- Prepare 10-12 roasted peanuts
- Take As required Grated coconut (garnishing)
- Take 1.5 cup water
Steps to make Lemon Quinoa:
- In a pan add 1/2 tbsp vegetable oil and add the mustard seeds, curry leaves and ginger to it. Let it crackle a bit.
- Then add green chilli.. salt, pepper and turmeric.And add peanuts. Let everything turn aromatic.
- Now,add water and let it boil and add the quinoa.. at medium flame cover and let it boil for few minutes lets say 4-5.
- Open the lid, you'll see that the water is still not gone so now squeeze in the juice of 1/2lemon and add a dash of sugar. Mix,cover and let water be soaked in properly and switch off the heat.
- Serve hot !
