The ingredients needed to make Reshmi'z Chicken Korma:
  1. Get 1 kg Chicken
  2. Get 750 gm Onion
  3. Take 30 gm Cashew
  4. Take 2 Cup Hung Curd
  5. Get 1.5 tbsp ginger garlic paste
  6. Get 1 tbsp Turmeric
  7. Take 1 tbsp Red Chilli
  8. Make ready 1 tbsp Coriander
  9. Make ready 5 tbsp(big) Oil
  10. Take 30 gm All Spice, Bay leaves
  11. Get 1 tbsp (crushed) Kasuri Methi
  12. Take 1 tbsp Garam Masala
  13. Get to taste Salt
  14. Get Water as per required for gravy
  15. Get Cilantro and Almond to garnish

Reshmi chicken is prepared by marinating chicken with. Method: Before taking chicken to oven, heat a piece of coal on gas, when coal is red hot put it on foil or a small bowl and place it in the bowl. The korma chicken does like to marinate for a while, so get it set in the morning before heading to work. I know that the ingredient list looks a bit long but DON'T FREAK OUT.

Instructions to make Reshmi'z Chicken Korma:
  1. Marination, Blanch, Cutting :- Churn Curd, Marinate chicken with half cup hung curd, all spices, lemon juice and 2 tbsp Oil, leave for half hour. Chop Onion. Blanch cashew nut. Grind blanched cashew to fine paste.
  2. Cooking :- - - 1)Heat deep pan or kadahi, heat oil, crackle cumin seed, asafoetida, bay leaves, all spices
  3. Put chopped onion, fry it to translucent, switch off flame. Cool fried onion for 10min.
  4. Remove bay leaves from onion mixture, grind the mixture in grinder. Make fine paste.
  5. Heat oil in kadahi, fry the marinated chicken to golden brown, mix salt and remove from kadahi, keep aside.
  6. Fry the onion mixture in same hot kadahi with little oil. Mix ginger garlic paste, fry to mix. Sear the mixture for 10 min, add all spices, turmeric, chilli, coriander. Fry for 3,4 min. Cover with lid.
  7. Add cashew, mix well, fry 2 min. Afterwards, Oil starts leaving the spice mixture.
  8. Add fried chicken, fry to mix the spices. Mix hung curd when spices start oozing oil. Add salt so the chicken and spices mixture get moist.
  9. Mix curd continuously so that curd don't get spluttered. Add crushed kasuri methi, mix well.Cover with lid.
  10. Add water as per required. Cook for 10min. Remove lid and add garam masala. Switch off the flame. Let it rest for 10min.
  11. Garnish with cilantro and almond. Serve hot with Indian Bread or mughlai bread.
